why?

Popping bursts the kernel's starch into an open foam with enormous surface area, so microbes colonize it far faster than the intact grain. The unpopped kernels at the bottom of the bowl are the opposite: a hard seed coat protects them, and a cool pile will sprout them into corn seedlings rather than break them down. Butter and salt do not stop the process, they just make it a food-scrap question instead of a dry-brown one.
