why?

Pepper walls are thin and mostly water, so the fruit itself composts in two or three weeks. Capsaicin, the heat compound in spicy varieties, doesn't bother compost bacteria or fungi at all — though it does irritate earthworms in a closed bin. Pepper seeds are tough, and a cool pile rarely gets warm enough to kill them.
